There hasn’t been much going on in the last couple of weeks in my garden since winter weather is fully setting in and I ended up getting a mild cold. Colds always give me a cough and it makes doing physical work difficult, so I opted for more indoor activities. One of the big tasks I worked on was prepping some more meat for Toscana soup (I’ll have a recipe up next week on this). I cooked and pre portioned 8 pounds of sausage and 2 pounds of bacon. I ended up with 30 portions of meat to use throughout the winter. I like to portion the meat for this soup on the smaller side since I’m not a big meat eater and it’s easy to double the amount by defrosting more than one bag if needed.
We’ve had several small snowstorms over the last couple of weeks, the kind where it accumulates one or two inches and then melts over the next couple of days. In between each of these storms I’ve done a few little outdoor projects. The upcoming forecast is quite cold for outside projects so I’m probably going to put the rest of them on hold until spring. I’m okay with this since I’m ready for some indoor projects (like reorganizing in the basement) and it’s always nice to have a few projects that don’t include planting to work on when my spring fever arrives which always hits pretty early in the season.
